Wild Venison Shank

The shank is the portion of meat around leg bone beneath hock on the back leg. This is a truly glorious cut when slow cooked, the meat becomes extremely tender whilst retaining its flavour and taking on the flavour of the herbs and vegetables roasted with the meat.
Wild Venison Tenderloin

Tenderloins are perfect for a starter, especially when served as medallions on a bed of fresh rocket with a dark red berry juice. The tenderloin is the pure venison fillet (not to be mistaken for the loin fillet). True tenderloins are found inside the deer’s abdominal cavity, and are much smaller and more tender than the loin fillet (backstraps).
