In February of this year (2025) we hosted a course for High Weald National Landscape 'A Beginner’s Guide to Setting Up a Venison Business' held at the Falconhurst Estate.
High Weald is committed to education, so this course was offered free of charge on a first-come, first-served basis. Since this was our first time running a course like this, attendance was capped at 12 participants to keep the group small and focused. There was also a waiting list, so we may run another session in the future for those who missed out.

Product Preparation – Basic butchery techniques and cooking options.
The product preparation segment was led by my husband, Thomas, who provided a butchery demonstration, followed by a Q&A session.
We believe it’s important to give stalkers more options beyond selling to large game dealers. By exploring alternative avenues, stalkers can maximise their return on each carcass and, if they choose, establish their own venison business.
